spinach souffle

Tonight Amanda and I celebrated valentine’s day – well, dinner, tonight. We exchanged gifts last night. I got the extended cut of Stripes on DVD. Best girlfriend ever.

Anyways, the point of this post is not that, but rather that Amanda made a great dish for dinner tonight – a spinach souffle. Basically a couple of egg whites and egg yolks (3/2 ratio, I think?), spinach, cheese, and then a topping sauce made with red roasted peppers and garlic. It was truly excellent.. I’ll get the actual recipe from Amanda and post it later.

Except I messed up and didn’t read ‘creamed frozen spinach’ but thankfully I had some actual cream so I added about 4 oz of that. I think it could have used more cheese or more cream. It was a touch too eggy for me. But thanks for the shout out!

PS Chris got me two pairs of beautiful earings. A pair of pink leverback freshwater pearls and a pair of little carved white flower studs. Best boyfriend ever.
