thai chili

While foraging for food last night, I realized we had a hunk of ground beef to use, and so I decided to experiment. The result was something resembling a thai version of chili:

  • A couple of pounds of beef, browned in garlic and ginger (i actually didn’t have any garlic, but naturally, it’s a must)
  • 1 large can diced stewed tomatoes
  • 1 can tomato paste
  • 2 cans red beans
  • 1 can coconut milk
  • chile powder to taste (for me, a lot. no really, a lot.)
  • fresh basil to taste (i had to use dried)
  • cumin to taste (again for me, a lot.)

The result? Well, it’s pretty good, but not great. Browned ground beef doesn’t mix well with coconut. It doesn’t taste bad, but chicken would have been a lot better.
